Spice Rubbed Salmon

1 (2lb) skinless salmon fillet

1/2 tsp. salt

1/2 tsp. coriander

1/2 tsp. cumin

1/4 tsp. cinnamon

1/4 tsp. paprika

1/8 tsp. ground black pepper

Preheat oven to 400*.  Combine spices and rub spice mixture evenly over fish.  Place fish on cookie sheet covered with foil. Bake for 20 minutes or until fish flakes easily when tested with a fork.  Serve with lemon wedges if desired.

I love to serve this salmon over short grain brown and any green vegetable.  I also go a little heavy with the cinnamon.  This is my favorite way to serve salmon.
